Bifteck Hache Recipe – French Hamburgers


In French, ‘bifteck’ means steak, and ‘hache’ means minced. What hamburger patties are made of is minced meat, so it is safe to say that the Bifteck Steak is the French take on a hamburger. The difference between a French Bifteck Hache hamburger and a hamburger anywhere else is the bun. The Bifteck Hache is a hamburger without the bun – essentially, it is just the steak. This is made with a lot of thyme, onions, and butter (ghee) in a mixture with the meat patty. Alongside this, a sauce is also made to eat the Bifteck Hache with. The best part is that this recipe of the French hamburger is completely adapted to the diets of ketogenic and paleo eaters.

Making the Bifteck Hache

We will first take a look at how the burgers are made, and then we will do the same for the sauce that goes with it.

Ingredients for the French Hamburger

French food is known for its generous use of butter. For the recipe, we use the clarified form of butter, which is ghee. The following are the ingredients to be used while making the French hamburger. While looking at this recipe, it is to be noted that a full onion should be finely diced and divided into half. The first portion is for the French hamburger and the second for the sauce for the Bifteck Hache.

  • Ghee (or coconut oil) – 2 tablespoons
  • Finely diced onion – 1/2 an onion
  • Ground beef – 1.5 pounds
  • 1 egg
  • Fresh thyme leaves – 1 tablespoon
  • Salt and pepper to taste

Bifteck Hache Steps to Make the French Hamburger

  1. In a pan, pour some coconut oil or ghee and fry one portion of the diced onions. The onions must be fried until they become a translucent color.
  2. Leave the fried onions to cool for a short while. After that, add them to a bowl with the rest of the ingredients, which are the ground beef, thyme leaves, egg, salt and pepper, and mix.
  3. Make around 7 to 8 thick patties, or more than 7 or 8 thinner patties, out of the mixture attained.
  4. Cook the patties on the pan until brown with another bout of oil or ghee. The French hamburgers are now ready.

We also use ghee here to make the sauce for the Bifteck Hache, too.

  • Beef stock – 1/2 a cup
  • Ghee – 2 tablespoons
  • Finely chopped parsley – 1/4 a cup
  • Finely diced onion – 1/2 an onion

Steps to make the sauce

  1. Use the ghee or oil that remains in the pan after frying the French hamburgers to saute the second half of the diced onion and also use the additional ghee for the sauce. Once again, fry the onions until they turn translucent.
  2. Pour in the beef stock and let the sauce reduce.
  3. Lastly, add the parsley to the reduced sauce after some minutes.
  4. Serve the sauce for the Bifteck Hache along with the patties.

We now have the perfect keto as well as a paleo-friendly and delicious French hamburger.
